I wanted to share with you three simple recipes for homemade vegan ice cream that even omnivores will enjoy! They are raw vegan but satisfy people of all dietary inclinations and have the bonus of being rather healthy.
This past weekend was my mother’s birthday gathering with some of her closest friends. The whole group were omnivores, so I decided to try some vegan ice cream recipes to see how they hold up to an omnivorous palate. I did a three-course dessert, since they’re healthy after all, might as well do three!
As far as hardware, I use a Yonanas machine, but you can use a good blender like a a Vitamix, Blendtec, or a Champion juicer.
The directions are written for a Yonanas machine but for blender, simply add all ingredients and blend progressively faster (slowly) but don’t crank fully: You want an ice cream consistency, not a smoothie.
[1] Vegan Affogato
Ingredients:
2 frozen ripe bananas
1⁄2 teaspoon ground cinnamon
1 shot of espresso or coffee
chocolate sauce (optional, I used Co-Op’s Microcreamery)
Directions:
Insert 1⁄2 frozen banana
Add 1⁄2 teaspoon ground cinnamon into chute
Insert remaining frozen bananas
Stir in bowl to combine
Scoop into glass or bowl
Optional: Drizzle your favorite chocolate sauce on top of Yonanas.
Pour a shot of espresso or coffee over top
[2] Apple-maple walnut (the omni pick of the night)
Ingredients:
2 frozen over-ripe bananas
1 cup frozen apple slices or cubes (use tangy varieties like Fuji, Gala or Macintosh, or a combination of all three)
1/4 cup chopped walnuts (or more to taste)
Maple syrup to taste
Directions:
Slightly thaw your frozen fruit prior to putting through your Yonanas maker.
pour walnuts into a bowl and pour maple syrup over, stir (leave some for toppings).
Insert 1/2 frozen banana into the Yonanas maker.
Insert a few maple-glazed walnuts.
Insert 1/2 cup frozen apple slices.
Insert a few maple-glazed walnuts.
Insert 1 frozen banana.
Add 1/2 cup frozen apple slices.
Insert a remaining maple-glazed walnuts.
Insert remaining frozen banana.
Mix all in a bowl, dole out portions and top with walnuts and some maple syrup if desired.
[3] Chocolate Coconut
Ingredients:
2 frozen ripe bananas
2 oz dark chocolate (always check ingredients. Higher percent cacao is usually vegan)
1⁄4 cup shredded coconut
Directions:
Insert one frozen banana
Add pinch of shredded coconut
Add 2 oz dark chocolate
Insert second frozen banana
(or break chocolate apart more and stagger with the banana and coconut mixture)
Stir in bowl to combine
Sprinkle coconut on top of ice cream

Love banana nice cream. I make mine with a food processor. My two year old laughed so hard at Oobe. Although he called Oobe a, “funny piggy.” LOL
