To match the equivalent of one egg in a recipe try using these alternatives. [see chart below as well]
For Leavening (end product will be light and fluffy)
Example: Cupcakes
¼ cup applesauce or
½-1 mashed banana or
1 Tbsp ground flax seed plus 3 Tbsp water or
3 Tbsp pureed fruit or
1 Tbsp chia seeds plus 1/3 cup water blended and set for 15 minutes or
1 Tbsp of your favorite vegan protein powder plus 3 Tbsp water or
¼ cup of silken tofu (tofu can also be used as a direct egg substitute for a tasty vegan scrambled egg dish)
For Binding (end product will be dense and thick)
Example: Cookies
1 Tbsp vinegar plus 1 tsp baking soda or
¼ cup of vegan yogurt or
2 Tbsp potato starch plus 2 Tbsps water or
3 Tbsp peanut butter or
2 Tbsp cornstarch plus 2 Tbsp water or
2 tsp baking powder plus 2 Tbsp water plus 1 Tbsp oil or
1 Tbsp agar agar plus 1 Tbsp water or
2 Tbsp instant mashed potatoes plus 2 Tbsp water

Thanks for the tips! When you “blend” the chia seeds and water, does that mean just to stir them together? Or to put them in a blender? I can’t imagine trying to process just 1/3 cup of anything in a blender.
